Green Rice

Ingredients

  • Soaked Basmati Rice : 1 cup
  • Palak (blanched) : 2 cups
  • Coriander : 1 cup
  • Pudina (mint leaves) : 8 to 10 leaves
  • Ginger & Green Chilly Paste : 1 tbsp
  • Garlic Paste : 1 tbsp
  • Onions : 2
  • Capsicum : 1
  • Green peas (boiled) : 1/2 cup
  • French Beans (boiled) : 1/2 cup
  • Ghee : 2 tbsp
  • Garam Masala : 1 tsp
  • Jeera : 1 tsp
  • Kashmiri Chilly : 1
  • Star Anise : 2

 

Method

Boil rice in an ample amount of water. Once the rice grains are cooked, strain them, and discard the extra water.

Take Palak, Coriander, mint leaves, ginger & green chilly paste, and Garlic paste, grind together to a smooth paste.

In a pan add 2 tbsp ghee, to it add jeera, Kashmiri chilly, and star anise and stir fry for a few second until it starts sputtering.

Now add finely chopped onions cook for 2 to 3 minutes, then add finely chopped capsicum to it.

Saute it till the onions change its colour and turn brownish,
Then add the green paste to the pan. Add salt to taste.

Then add boiled green peas & french beans.

Let this cook for a while, add some garam masala, and let it cook.

Now add cooked basmati rice to it and stirring gently for about a minute till all the rice is well coated.
Allow it to cook for around 8 to 10 minutes, stirring occasionally.

Turn the flame off, your Green rice is ready to be served.
