Tomato Veggie Soup

Ingredients

  • Tomatoes : 8 to 10
  • Carrot : 1 cup
  • Beetroot : 1/4 cup
  • Bottle Gourd / Dudhi : 1/2 cup
  • Mint Leaves : 8 to 10
  • Curry Leaves : 1 stem (5 to 6 leaves)
  • Mixed Herbes : 1/2 tbsp
  • Dry Ingredients:
  • Red Chilli Powder : 1/2 tsp
  • Black Pepper Powder : 1/4 tsp
  • Sugar : 2 tsp
  • Salt : As per taste
  • Water as required

Method

Add tomatoes, carrot, beetroot, bottle gourd, and mint leaves in a pressure cooker.

Add 1 glass of water to it.

Close the lid and cook till 4 whistles.

Let the pressure go down by itself then open the lid.

Blend these cooked veggies with a hand blender adding water as required.

Now strain using a medium-sized hole strainer to get a fine clear soup.

Add it to a sauce-pan and bring it to a boil.

Now turn the flame low and add all the dry ingredients.

Simmer the soup for about 7 to 10 mins now, stirring it occasionally.

Now add Curry leaves & mixed herbs. Cover and let it rest for 2 to 3 mins.

This wholesome soup is now ready to be served.

You may serve hot with croutons (optional).
