Authentic Indian Sambhar

Ingredients

  • Toor Dal : 1 cup
  • Medium Onion : 2
  • Medium Tomatoes : 2
  • Medium Bottle Gourd : 1
  • Orange Carrot : 1
  • Pumpkin : 1 small piece
  • Drumstick : 1
  • Urad Dal : 1 tbsp
  • Turmeric :  1 tsp
  • Asafoetida (Hing) : 1 tsp
  • Chilli powder : 2 tsp
  • Green Chilli (Split) : 2
  • Sambhar Masala : 2 tbsp
  • Kashmiri Red Chilli : 1
  • Curry Leaves : 10
  • Chopped Coriander : 1/2 cup
  • Tamarind paste : 1 tbsp
  • Oil : 3 tbsp
  • Salt to taste

 

Method

Sambar is an authentic south Indian dish, which is easy to make and loved by all. It can be consumed with a variety of items such as Idli, Dosa, Uttapa, Rice and much more.

Pressure cook all diced vegetables with tur dal, turmeric, aesofoetida, green chili and salt upto 3-4 whistles. selection of vegetables depends on the chef, you can add or skip from the given list of vegetables.

In another vessel heat oil, temper with mustard seeds and urad dal, once crackled add whole red chili and curry leaves. Add this on the dal mixture. Add red chili powder, sambhar masal, tamarind paste and stir well.

Garnish with coriander leaves and serve with a variety of items such as Idli, Dosa, Uttapa, Rice and much more.
